maasdam, edam, couple of those, mix of young and old
If it's for a sandwich I'm likely putting tomato and some sort of leaf in there too so probably mozza
putting lettuce in a toasted sandwich

mature cheddar (for flavour) and crap ready grated mozzarella (for stringiness)

Mature/Vintage Cheddar, maybe some lea and perrins. Simple, classic.
If you're in the mood a British toastie version of a quattro formaggio is a good shout:
Dbl Gloucester, Red Leicester, Mature Cheddar, and then some cornish yarg or similar - great great great.
Also, mexicana cheddar is great for this.

are we slicing or grating the cheese here?
you really need to slice for a toasted sandwich don't you? grating you end up with pretty pathetic consistency. also means you have to clean the cheese grater, it's important to consider this because it is a pain
