Two reasons: Yelling and general vocalizations have been shown to be pretty effective in dissuading bears; the louder the better. More importantly, you need to show at least some confidence, so in vocalizing phrases, sentences, and words even in a straightforward monologue, it's more plausible that she would frighten the bear off than shouting single words or simple utterances. She doesn't want to show fear in her general attitude/body language per se, but in displaying angered passion, I would say she's doing an effective job.
Secondly, any encounter with a bear is a risk. Pepper spray is incredibly effective against bears, but it's not going to work 100% in every situation; probably especially when she's already given it a small dose, losing a bit of its surprise factor to the bear's senses. Charging up to the bear with pepper spray at that point would just be inviting another opportunity for danger.
That said I can't say my response would be anything other than getting the hell out of there.
someone with the supposed minimum knowledge of wildlife (at level of make a solo kayak trip) is trying to make a quarrel with a bear.
