Not sure what actually defines a cobbler though. some cobblers have pie crust. some have scones in them. who the fuck knows.

OED: mid 16th century: from French, past participle of desservir 'clear the table', from des- (expressing removal) + servir 'to serve'.
see the last link I posted above. I think it's probably a bit classist and comes from when the aristos would eat desserts (of dainty sliced fruit, eaten with small fork and spoon) and the peasants would eat stodgy pudding with the left over suet from the kitchen. The poshos would never dream of eating pudding.
Desserts were so called as it came once the table had been ‘deserted’ of the other accoutrements

it's def not a fact that UP is wrong, coz although the etymology is about the clearing of the table, it's initial use could well have related specifically to a fruit course. Hard to figure out. We've got some very old books on cooking here as you might expect, might have a gander
