unless it's an especially nice one, and you've got something less quality lying around — in which case, drink the former, use some the latter in your cooking, and then drink the rest of that one too.
i just remembered that i made a chilli last night that i bought a tin of beans for but didnt use the beans in it when i made it last night, the chilli taht is

as in, from 2005 and stuff. They've practically turned to port so I wouldn't drink them, but to cook with they're awesome.
though if it were me i'd sod the red wine and double balsamic vinegar instead
any aroma is a bonus but if you've not got a good one sitting about just put in a bit less of a less nice/slightly off wine. Alternatively a tiny bit of red wine vinegar.
