rump - very rare
mega expensive Hawksmoor Porterhouse - however they tell me it should be cooked.
ribeye/sirloin - medium rare almost medium
rump - no i'll have the fish please

Most things tend to have a fairly well set definition of how it should be cooked, yet steak is allowed to lord it around.
(I always ask for mine to be cooked medium-rare)

Where they put some hot volcanic rock in front of you and lob a slab of meat on it. That was good fun
because then it usually comes more like medium rare, although I'll have it anything from blushing pink to red. I tried a well done steak once, it was rank.
I always thought I liked rare going from the 'rare' I got served at restaurants until my boyfriend made me a rare steak and it was impossible to eat comfortably. Rare is fucking awful. Medium rare is awesome.
