I want all of your tricks and secrets. I keep making a spicy bolognese with kidney beans, and it's just not right.
and other stuff, obviously
no beans, minimal tomato
use as many different types of chilli pepper as possible ( http://www.mexgrocer.co.uk/Ancho-chili/ )
it's not done until the wooden spoon can stand up in it without support
The dark chocolate makes it amazing.
I use kidney beans, brown lentils or pinto beans, mushrooms, sweetcorn, garlic, onions, chopped tomatoes, tomato puree, ground cumin, ground coriander, ground turmeric, and (the essential bit) either smoked paprika or some of this stuff: http://www.coolchile.co.uk/products/view/chipotles-in-adobo-185g

lamb mince, carrot, courgette, onion garlic, some red pepper, kidney beans, chilli powder, tobasco, oregano, little bit of cumin
Also pickled chipotles are great.
Bit of dark chocolate
like a good few hours. Use whole cumin seeds, chilli and whatever else that looks spicey or herby and tasty. Using chopped up fatty beef (or roasted then pulled beef / pork) makes a cracking chilli also, stops it seeming so much like a spicy student bolognese then.
has beer, dill and lemon juice in it and no tomatoes amongst other stuff. anyway its very very nice
