I made some delicious soup on Sunday. I’m not blowing my own trumpet but I basically threw the ingredients into the basket, without giving them too much thought (I mean, I’ve cooked soups before).
This were the ingredients:
- 6 Tomatoes, chopped
- 2 sticks o celery, chopped
- 1 red pepper, chopped
- 2 onions, chopped
- Few leaves of basil
- 3 chillies
- Black pepper
Fry the above ingredients for about 10 minutes then add about 1.7 litres of boiled water with chicken stock.
Add Worcester sauce, Simmer for about 2 minutes then add half a tin of sweet corn and half a tin of lentils, then simmer for another 3 minutes.
Blend the whole lot up and then put back on heat and add the remainder of the sweet corn and lentils.
Serving suggestion – In a cup with a dollop of yoghurt and sprig of parsley on top - delicious.
