Will probably cop a heap of flak for that, but fresh beetroot isn't widely available in my part of the world, and while I've never actually cooked them myself, I've been led to believe that it's a bit of a chore to do so. Would still like to give if a go, but never think to look for the fresh stuff.

I like it in cans. Fresh is better, but you pay quite a lot for a massive bag and it boils down to bugger all. So I like a can on standby, especially if you are just chucking it in a curry anyway. Only the non-chopped stuff, that is just a murky goo.
