gimme your best recipes. Do i need to crack an egg in?
I don't understand it
Put the meat in a bowl, throw some finely chopped onions in, season, mash and then mould the patties with your fists. I do this and they don't fall apart. Shall I get out my burger picture again?
it helps bind the meat and gives the burger a lovely creamy under-note. You shouldn't need to add an egg yolk. Try and get a coarse ground mince and make sure you season well with salt and pepper, roll into balls and then flatten with the back of a spatula / slice in a really hot pan. Oh, and don't forget the pickle.
Just pack that meat together - a squidge of tomato puree / crushed garlic puree and season. No reason it should fall apart / get dry if you cook it in a good grillpan.
Keep it simple, don't fuck about with breadcrumbs and egg, it doesn't need it.
that's the important bit. I'd post my recipe but it's needlessly complicated and people will get all IT'S JUST BURGERS YOU NOB, 'cause burgers are a thing people get uppity about now.
don't salt it until just before you put it in the pan. The salt binds the meat too tightly if you put it in while mixing and you lose the fall-apart-y-ness of a good dirty burger.
just don't do what i did and follow Jamie Oliver's recipe with smashed up jacobs crackers in and not smah them up enough. you don't want crunchy burgers

last time i did them the pan was really hot but they a started to fall apart and b the outside properly burnt and the middle wasnt quite cooked. Maybe cause the pan was too hot?

Stop this noncesense.
taste the difference ones, or just butchers ones. Ready seasoned, they usually cost less than 50p a pop, just as good as any one I have made with good mince, seasoning and any number of varieties of egg / flour / onion.
meat. salt. pepper. parsley. nothing else is needed.
i sometime stuff a ball of cheese in the centre but thats up to you.
but if you can find wild garlic, godDAMN put that in.
Some good recipes (I've made the Fight Night burger before and it was outstanding) and the blog is excellent too, should get your mouth watering.
