Would it be possible to rent a car
if the address on your driving license was for your old address?
Or do you reckon they'd only let you have one if your current address was on it?
Now imagine, in this hypothetical scenario, that I've already booked the car and put my old address because of this, but after completing the booking realised I need to bring additional proof of address (they ask for a <3 month old utility bill) - which I obviously don't have.
How do I get out of this one?

think as long as the utility bill matches the address you're giving them

Depends on the company
They will normally ask for the licence address to match the utility bills, but be careful if they stipulate that the bills need to be recent i.e. within the past couple of months.
