Genuinely never achieved it
It's only now I realise that that was a golden era
It proper spits at me haha right in the face
so the raw egg on top spills on to the pan and makes a really thin layer.
That's the word I was looking for. Tilt the pan.

Fry the egg on the highest heat for thirty seconds. Your edges will crisp long before the egg looks cooked through in the middle. Adjust the heat to medium. Cook for a further minute and baste.

cause those bits are gross
You're just unwittingly brilliant at frying eggs.
mostly cos I leave too much oil on for too long and then overdo the egg, cos I'm not paying any attention.
use vegetable or groundnut oil
Makes the yolk go a bit white too.
