Cheese: Cathedral City Mature Yet Mellow or Mild Yet Distinctive
Toast bread, melt the GRATED cheese until its cheesey and spreadable, spread over the whole surface so its even, leave under grill until it burns a bit.
You melt the cheese separately and then spread it on toast?
I make the cheese melty on the bread and then I spread it all over the bread so its nice and even. I make good cheese on toast.
white bread times two, toast one side
flip and add cathedral city cheddar on top
splash of worcestershire sauce and a sprinkle of pepper on one slice
toast until bubbly
remove, splash of ketchup on the other slice, enjoy
white preferred because it goes crispy on the outside and stays fluffy in the middle - brown has more flavour but it's all about the texture for CoT
ketchup because I'm one of those dicks who likes ketchup on savoury things
extra mature cheddar
bit of red onion chucked on top
though brie on toast is good, too.

i normally heat the grill, cut around six thick slices, preferably cheshire cheese but cheddar or red leicester are as good. cook it on one side, turn over, add cheese, cook til about half there, sprinkle on pepper and worcestershire sauce, back under til edges look done.
Spread with tomato puree then either medium cheddar or applewood. Bit of pepper on top. Grill until melted. Don't toast the bread first, it's best if the bread stays mostly bread like and not too crunchy.
no initiative - lightly toast some bread. Cover in grated cheese. Splash of worcestershire sauce. Grill.
loads of initiative - WELSH RAREBIT/RABBIT that bad boy up. You basically make a thick cheese and mustard sauce, pour it over some toast, then grill it.

and then finish it under the grill to melt the cheese are mental. Just grill one side and then flip it over. Grill and flip.
then it's too soggy. need to toast the whole thing first.
sometimes i put dollops of ketchup on before grilling.
NEVER GRATED CHEESE.
Everything else is just whatever granary/white bread and strong cheddar or cheshire cheese that I have.
and the very slight inconsistency of texture is one of the joys of cheese on toast

Grill on low/medium (never ever do it on high, as the cheese will burn before it had a chance to properly melt.

...they put grated cheese in a plastic bowl, melted it in the microwave then poured the runny cheese over some toast.

put thin slice of ham on, followed by thin slices of cheese. pepper and lea and perrins it.
Toast until it bubbles
as a side note i still call this "roasted cheese"
under the grill for 5 add a little worcestershire or ketchup
alternatively a little bit of blue cheese on a french stick cooked the same way or cheese toasties under the breval, just a little ketchup mixed in maybe a slice of ham if i'm feeling meaty.
