I've got my crayfish sauce down to a T now.
It's a shame really as I'm not huge a seafood fan.

the are a lot of dishes that don't require a stellar technique and simply require you to follow the most basic of instructions as much as chop ingredient x introduce it sauce b introduce ingredient y after time z and reduce to temperature to a deg c for b amount of time until you get dinner c
you should offer to cook a whole meal for your mother one evening. you can do something really easy and delicious and you might find you enjoy it. cooking is good for the soul.
like trying new stuff when I get the opportunity, but new dishes always take twice as long to prep/cook, and I don't really have heaps of spare time pre-dinner, so we always end up eating the same dishes.
Tonight was baked chicken, leek and corn risotto.

and normally make pretty nice stuff but I don't really know what I'm doing so stick closely to recipes. If I was just given a load of ingredients I don't think I could do much.
Ministry of Food & Jamie's Dinners are probably best examples of this
I don't really understand people who claim not to be able to make simple things it is literally just following basic instructions, which is someting i'm sure the majority of people can do. Give or take equipment that doesn't work quite like the recipe planned.
Yeh, harder recipes is a skill though, but it is like any skill it takes time and practice. Once you've cooked for long enough you can pick up ingredients and know how they go together.
But then i love cooking, and once spent the two days making a dessert, best dessert ever mind.

even though I'm totally indifferent to him. People just keep buying me them for me for Christmas. I think they assume that as a twentysomething man who likes cooking its impossible for me not to love Jamie Oliver.
even if I cock it up! I just love the whole process, I prefer the recipes that don't give me time to rest either, it's got to be go go go with me... the more to do the better :)
however, i hate it when i cock up. it puts me in such a bad mood.
But even after a really long hard day, I really enjoy cooking and even more so if i'm cooking for someone else.
it's a good deed and an ego thing ;)

but i go realy love feeding people and love being fed. Fussy eaters can fuck off.
