When writing 8 weeks is it:
i think eight-week might be grammatically correct though

BUT if you're talking about it as term, e.g. it is an eight-week contract, then you can get away with the hyphebn. i think. Oh what do I know?
Aside from 'hyphebn', obviously.

AND THERE WAS A MINI DEBATE ON EIGHT WEEKS v EIGHT-WEEKS. I SAID EIGHT WEEKS SOMEONE ELSE SAID EIGHT-WEEKS. I NEED TO SETTLE IT WITH A RELIABLE SOURCE.

eight weeks on its own is fine sans hyphen. However if its used say like 'this is my eight-week-old baby' or 'he's got an eight-week jail sentence' then it's alright
