Just discovered chipotles (yeah I'm fucking cortez fuck off)
Let's hear it for the chipotle: the smokiest of all the dried chillies.
Suggested chipotle recipe (courtesy of Ottolenghi):
Scrambled smoky duck eggs on sourdough
4 slices sourdough bread
2 tbsp olive oil
4 cloves garlic, sliced
4 spring onions, cut into 2cm lengths
4 plum tomatoes, roughly chopped
6 duck eggs
1 tsp salt (maldon if you like? I don't care. Cheffy bastard)
Freshly ground black pepper (yeah, it better be ground fresh)
1 bunch coriander, roughly chopped
4 heaped tbsp sour cream
Put the dried chipotle peppers in a bowl, cover with boiling water and leave to soak for 15 minutes. Drain, chop into rough chunks and set aside.
Heat the olive oil in a large frying pan. Add the garlic and spring onion, and cook, stirring regularly, over a medium-high heat until they begin to colour. Add the chopped tomatoes and chipotles, and cook for a further minute or two.
Meanwhile...place the sourdough slices under a hot grill and toast on both sides. Spread lavishly with butter and then set aside somewhere warm.
Break the eggs into a bowl, beat lightly with a fork and add salt and pepper to taste. Tip the eggs into the pan and cook, stirring continuously, for about a minute (giving runnyish scrambled eggs)
Put a slice of toast on each plate, spoon the eggs on top and sprinkle with coriander. Serve at once, with the sour cream on top or on the side
