The dissolved CO2 escapes as the carbonic acid is released. So it's not the bubbles, but the CO2 (which is the gas in the bubbles) is the cause and result of the bite. The carbonic acid is what gives you the bite, but the dissolved CO2 to make carbonic acid is the bite. So, yeah, it's not the bubbles but what the bubbles come from.
as in, it's not the physical sensation of the bubbles bursting upon the tongue that causes the bite.
That was enough to blow my mind.
The bubbles must make the drink 'feel' different in your mouth even if they don't actually alter the taste. I suppose I'll have to drink some coke in a hyperbaric chamber to find out for sure.

you can taste the carbonic acid.
if you're ever in the position that you have to a bottle of water for some reason, then I sometimes like to induldge in some fizzy water because it makes me feel that I'm getting something over and above the norm.
does this mean that soda streams worked just by pumping carbonic acid through the flat mixture? I used to suck on the cartridges when I was wee. No!
The gas cylinder was full of co2, not acid. This makes it a whole lot better, I think.
