What sauce is best and what else should i throw in with it

...I would like to cut a perfect square out the middle and place it directly onto the back of my tongue, a la Torrode.

once done, take them off and keep em warm
deglaze the pan with a squeeze of half a lemon and chuck in a couple of anchovies, a few capers and a know of butter. fry the whole lot until the anchovies melt, put in some fresh chopped parsley and then put over the pork chops.
a good grinding of black pepper and bob's your uncle
dead easy, and it impresses people as well
