I'm never going to believe anything I see on tv ever again. One day EVERYTHING will be green screen won't it? Even the actors
Uncle Travelling Matt, the dude that sent postcards home to The Fraggles was named after travelling matte, which I believe is basically the same technique as green screen and so was a nod toward the fact he was patently not in any of the countries that they put on the screen behind him.

blue is less good as it people may have blue eyes, whereas they're less likely to have bright green eyes
Green has kind of taken over because in close ups and stuff people's eyes were more likely to match the deep blue than anyone's ever match that vivid green.
^ Could be total lies, this is just according to my housemate but he works in that line of work so I'll believe him
Green and blue tend to be used because they're the furthest from skin tones. Obviously, if you've got blue on set, it's got to be greenscreen and vice versa.
Green is more sensitive to digital cameras, allowing you to work at a higher quality and resolution than than any other colour. Besides that: Sky is usually blue - which can make filming outside using a blue screen problematic.
On the other hand, all that extra detail green gives you means that the risk of spillage (when the background infringes on objects being filmed in the foreground) is that much greater.
