So I'm applying for a job in a call centre. They want two references from previous employers, but I only have one previous employer.

If you can't provide two, you need to have someone from your last place of education act as a reference. I was absolutely shit at my last place of education, plus they were an absolute nightmare to get hold of last time (I tried using them before).

I also can't have a relative or friend or someone who is an acquaintance do it, so I'm a bit stuck. Any ideas?
