is there any way that I can protect parts of a document so that only certain areas can be changed?

Also, is there a way to add a drop down menu, or an option to include one of 4/5 statements?

I'm doing up a letter template, but I don't want people to be able to edit certain parts, and I want to be sure that they only use one of a selection of specific phrases.

Does that make sense?
