affordable and not incredibly complicated

one of the best meals ever
Dinner? Lunch? Breakfast? Snack? Starter? Main Course? Dessert?
For the filling:
1 Onion (chopped)
250g mushrooms (chopped)
1 slice of bread (preferably wholemeal – crumbled)
3 Carrots (chopped and parboiled – boil for say 5 minutes)
Teaspoon of thyme
Teaspoon of tomato puree
Handful of chopped parsley
Dessertspoon of marmite
Handful of peas or chopped peanuts
Salt and pepper to taste
And for the topping:
Put the potatoes on to boil (they should be boiled for 20minutes). Fry the onions and mushrooms. Then add the rest of the filling ingredients. And heat for 5-10 minutes (until the peas and carrots are cooked). You may want to add some vegetable stock if it is too dry. Spoon into an overproof dish and cover with the potatoes, which should be mashed with a little sunflower margarine until light an fluffy. Rake a fork across the top of the potato to plough it, and then add little dobs of margarine across the top. Pop under a hot grill until the top browns and then serve.
caramalise some onions with a cinnamon stick, add some lamb mince and season.
have that with houmous and pittas.
