I mean I know they have one but why can't you see it? That's a weird evolutionary quirk.
There is this thing called the thyroid cartilage in the larynx. In a child, it has a specific angle, to which the arytenoids (some more cartilages) and vocal cords are attatched, their relative movments cause vibrations that allow you to speak (this is a oversimplification). At puberty, under the influence of testosterone in males, the thyroid cartilage angle increases, causing it to protrude out of the neck (I Think it goes from 90 to 120+ degress or summat). In females this doesnt happen (significantly). This forms the 'adams apple'
At the same time, the cartilage protrusion pulls on the vocal folds causing their normative state to be more tense than in females. This leads to males deeper voices

From 120 to 90
it changes position in the throat, and with it, the thyroid cartilage changes shape so it protrudes out of the front of the neck more.
