Safest bet, unless you know for a fact you're getting a really good cut, and I don't usually have the money to be eating in the sort of places you can be sure of that.
cook it for a minute on each side, then work it on 10 second turns. it's all about watching the colour rise up the sides of the steak.
such as if I'm cooking it or not, or the establishment I'm in.
....and i'll have mine fucking rare or blue....although many chefs dont know how to do this properly
