i always buy cheddar but i feel like broadening my horizons a bit, what do people recommend?
or the stilton with apricots in. i like cheese with non-cheese ingredients.
suggest what to have it with if needs be.
red leicester and double gloucester which are pretty similar to cheddar.
brie which is softer so you can't really grate it. can be mild or mature. good with crackers/bread/bacon.
then stuff like emmenthal and gruyere which are stronger, hard cheeses, good for sauces and with pasta. slightly nutty flavour.
then you've got gouda and leerdammer which are all rubbery andsuck balls.
go for brie

If you want it with wine, get something blue (Gorgonzola, Stilton, Dolcelatte, etc..) or a good goats' cheese like a chevre log slice and have it with some walnuts, grapes and pickled cabbage.
If you're cooking, it really depends what you're after. Obviously, Parmesan brings universal joy (in the piece, not pre grated) but Emmental often cooks well in sauces and pasta bakes and the like and Taleggio is great in anything.
It really depends what you're after. The key is to experiment and learn what tastes good with what. Nothing's disgusting, so just buy and taste!
put it in everything and watch your cholestrol reach dizzying heights due to its majesty.

its a bit hardcore though, so you'll have to be tough
