anyone know any good recipes? And do I need canned chopped tomatoes or those plum ones? Cheers.
2 x cloves garlic
2 tbsp - olive oil (crushed or finely chopped, whatever floats your boat)
1 x 400g tinned tomato
salt and pepper
sweat off onion and garlic in olive oil (don't let it colour), add tomato and simmer for 10 minutes (or until thickened). season.
i meant you have to chop or crush garlic. not olive oil. that would be fucking mad.
and some basil.
get pasata rather than chopped tomotoes, it's generally better.
what I usually make
fry and onion and some garlic whilst roasting an aubergine, pepper, chopped onion whatever, drizzled with some olive oil and lots of s+p. once the onion and garlic is done put in the pasata and add the roast veg once that's done. Cook it down till it's sauce-y then add capers and olives at the end. you could put some ketchup and sun dried tomato paste or whatever in it if you wanted. done.
all roasted to a crisp with lots of pepper on it. brilliant.
For a really, really quick sauce, to one tin of tomatoes, I add:
A bit of olive oil
1 tspn of Basil
1 tspn of Oregano
Pinch of thyme
Clove of garlic (peeled and chopped)
Half an onion
Heat it up until it simmers down. That'll be enough for two people.
i just cooked some pasta and emptied a tin of plum tomatoes in it
it was like a swimming pool
i made one from scratch once, i even skinned and crushed the tomatoes myself. and then i just fried all the vegetables i wanted and put them all in there.
garlic is always a winner, plus spices like basil and oregano. a bit of chilli is good as well.
