Thats what I do pal :D
The only thing I know about chocolate sauce is that its viscocity is dependant on the cream:chocloate ratio and the shear rate from this. I.e more cream makes it runnier. But doe to the molecular attraction between the chocolate and cream, you will never get a viscosity as fast as any normal liquid.
