Question about deleting torrents

I've joined the dark side (and it feels ok) and so I've got all these torrents built-up. Now, I know it helps my ratios to just keep them open...and I haven't really noticed my bandwidth making the internet all slow or anything, but...

is that gonna happen? Or has it been happening and I just haven't noticed things getting slower? What's the downside of just letting the torrents stay in place?

...if I do want to delete torrents: there's one button that says plain ole 'delete' and then there's the 'delete all' which says I can delete the torrent, delete torrent and data, or just data. Which one do I want?

Of course I don't want to delete torrents and then have all my shit disappear. I like music. I really like free music.

Please explain the basics to me. Much obliged.
