what happens to the volume control/levels when you use the remote rather than the dial on the amp to adjust the volume? For example, on my system, if you turn the volume up/down with the remote, the volume dial itself doesn't turn, so you can turn the volume down to zero without the dial being on zero (if you see what I mean). Is this reset when the power's turned off? Or are the various volume levels just altered every time?

This reminds me of spinal tap a bit.
