When doing more mundane (but also important) jobs, how do you keep your attention focused so you don't make any mistakes?

If the phone is ringing and you are speaking to a client face-to-face, how would you cope with the situation and who would come first?

These are the two questions that I ALWAYS fuck up on and I have an interview tomorrow and I'm scared :(
