I just made one of these. Sautéd some garlic, onions, green chillis, corgettes, mushrooms and red peppers for the filling, then slapped some tomato puree and grated cheese on one of the tortillas and spread the veg on it, plus some chunks of feta. Then I covered it with another tortilla and grilled both sides (because our frying pan is really small).

Tasted FANTASTIC. Yum.
