If by left field hip-hop you mean that boring shit that indie kids dig then by all means check out anticon & Def Jux. They have released some amazing stuff in the past, but the last few years has mostly bean shit in terms of independant hip-hop.
In reality alot of the most avant-garde stuff is in the mainstream rather the 'underground'. I mean check the beats on the latest Clipse album, the Neptunes are like the biggest producers in the world, yet their beats are far weirder and more adventurous than anything you'll find on some wack busdriver record.
Check early Wu Tang too, those RZA productions on 'Enter...' 'Ironman' 'Liquid Swords' et al were totally revolutionary and experimental, and Wu are like the biggest hip-hop group ever.
In terms of weirdness it doesn't get much weirder than Kool Keith. His early group Ultramagnetic MC's 'Critical Beatdown'is a stone cold classic, mixing vintage beats with Keith's unique flow. His lyrics are like some sort of modernist novel; all fractured stream of consciousnes filled with bizarre imagery.
I could go on and on and on, but i'll leave it at reccomending Madlib, J Dilla, MF Doom, Edan, Goodie Mob, Cadence Weapon, Lil' Wayne...
And of course the first few Outkast albums!

He has a weird ass flow and pretty strange voice, plus his lyrics certainly aren't typical.

Don't bother, it's shit.
And I enjoy RoadKillOvercoat just as much as a lot of his earlier records.
I love 'The Troglodyte Wins' so much that I went for a solid fortnight wanting to listen to practically nothing else.
And I never quite know what 'leftfield' means and I get very confused but I think everyone ought fully embrace the Deltron 3030 album. I have been listening to it again for the first time in about five years and I had forgotten how rich and cinematic and clever it is. Del Tha Funkee Homosapien is so good soundin'.

undeservedly obscure, and no-one's ever really come close in terms of innovative lyrics. I can't recommend it enough
