It's so easy to make (if you have a blender) and it tastes a million times better.
I just do it all by feel but quantities would be roughly:
2 cups basil leaves
1/3 cup pine nuts
2 cloves garlic
1/3 cup freshly grated parmesan
1/2 cup olive oil
Put the basil, garlic and pine nuts into a food processor and pulse a few times, scraping down the sides.
Add the cheese and half the olive oil and process until you have a thick paste. With the food processor running drizzle in the remaining olive oil until you reach the desired consisitency.
Serve with pasta or a sandwich spread.
Pestle and mortar.
