Dear Homebrew/ Ale nerds,

Me and my housemates have purchased a homebrew starter kit and got some ale on the go. It recommends 4-6 days for fermenting.

If we want it to be mentally strong (but still drinkable) what is the maximum we can leave this.

Also has anyone made their own spirits?
