plasticniki's annual "where should I go on holiday?" thread (SE Asia-centric)

Did Malaysia last year. Loved it. Want to go somewhere else in SE Asia this year again for three weeks. Am looking at doing a trip flying into Hanoi down through Vietnam and into Cambodia, flying out of Phnom Penh. So option one is Vietnam and a bit of Cambodia.
Option 2 is flying into Bangkok and out of Phnom Penh. So Thailand and a bit of Cambodia. Option 3 is Indonesia, and option 4 is the Philippines (which I've been to, twice, but I want to go back and travel around the entire archipelago independently).
What I want is an experience not far off that I had in Malaysia. So, a couple of cities, beaches with great snorkelling (perhaps I might do a PADI course), amazing food, varied culture, some jungle with wildlife. I don't want pissed up Brits abroad, or for anything awful to happen to me, obvs.
I know you're all gonna say you'll have a great time wherever you go, and yes, I know I will, but when I did this thread last year re: Malaysia, y'all were really helpful.
