I think John Barry might top the list for me as he did the 'Dances with Wolves' OST which is probably the best score for a a single film ever, and he did the stuff for 'The Living Daylights', 'Out Of Africa', 'Zulu', 'The Lion In Winter' - the back catalogue is very impressive.

His music is stirring and romantic and epic and there's nothing like it to listen to on a rainy day when you just want to be transported onto the American frontier or into the grassy plains of Africa.
