Proper Indian classical music is incredible
You can't go wrong with anything by Ali Akbar Khan (sarod) or Nikhil Bannerjee (sitar) who are both legends of Indian music I'm reliably informed. Or indeed Ravi Shankar, providing you don't buy anything with Bono on it or whatever.
Also Nusrat Fateh Ali Khan was from Pakistan and played Qawwali which is very different to Indian music but well worth investigating. As with Shankar, avoid the 'contemporary' stuff he did and go for the real deal. It's incredible.

I'm quite surprised
at the level of knowledge of south asian music here... not that I'm an expert but it's dented my illusions. The only ones I would add are:
Zakir Hussain (tabla master)
Malkit Singh (bhangra... punjabi music)
Niraj Chag - www.nirajchag.com - a plug really since he's a friend of mine, but he's very good, he mixes all the styles up
Rajastani music is great as well but I've no specific recommendations... also if you're on emusic, it actually has a reasonably good selection of indian music
