MM..Food is good but there are too many skits and not enough of Doom on the mic. I think Doomsday is still out of print though so you're more likely to find a copy of MM..Food.
The beat
and bass on I Hear Voices, Pt. 1 are incredible. And it's an extra track not available on all versions of Doomsday. Who made that mistake?!

I never understood it when people said Madvillain wasn't as good as they thought it'd be - it's incredible.
Basically, get everything you can by him, he's amazing. I'm a bit of a fanboy, even the Special Herbs albums are worth getting, which are just the instrumentals...

try getting Special Herbs and Spices with MF Grimm. DOOM does the beats while Grimm raps over them, it's a tight album

1 - MF DOOM - 'Operation: Doomsday!'
Stone cold classic. Even though its made up of 12" releases, it flows perfectly and is an amazing front to back listen. Really atmospheric. I got the Fondle Em version when it was first released and was blown away. The beats are bonkers, but are also the reason it'll probably never get re-issued.
2 – KMD - 'Black Bastards'
Amazing album, nice dark sound to it and explains the style and sound of the early MF DOOM stuff.
3 - Viktor Vaughn 'Vaudeville Villain'
Thought this wouldn't work, but was totally wrong. Really sparse, electronic production and, lyrically, this is him at his peak IMO.
I wouldn't bother with anything else, aside from Madvilliany. There are a few gems, and I cop everything he puts out because I'm a complete DOOM fan-boy, but his more recent output has been average. DangerDOOM was cack.
Gis a shout if you can't find any of these and i'll upload them.

a lot of classic, classic stuff.
Operation: Doomsday is probably my fav - not totally made up of 12" releases as someone said but solid and DOOM's flow was at its most animated here. Pretty rare on cd now, if youre gonna get it get the Subverse edition, it has a better running order, a quality video and an extra track.
Other than that:
Madvillain is kinda arch but some hilarious and clever rhymes and Madlib's production is immense.
Vaudeville Villain is a classic, Saliva is one of my fav DOOM tracks.
DangerDoom is fun but nothing special.
MM Food has a few dope tracks - Hoe Cakes if you need something to download.
King Geedorah is maybe my second fav of his albums, mostly Metal Fingers here - he only rocks the mic on two tracks.
If you find youre big into all these - just dig around, the guy pops up everywhere - special mention to hsis tuff with MF Grimm (before they fell out) and his remix of Non-Porphets Damage, called "Doomage"
